Hello and happy weekend! Just a quick post with an easy recipe to start your new year. The picture looks disgusting doesn't it? I don't think there is any way to make refried beans look pretty. Despite the photo, they are so good, and really easy and quick to make. There is no need to buy refried beans ever again. Just keep some cans of beans in the pantry and you can make your own whenever you get a craving. These are made with black beans but any beans would work. You also don't really need a recipe. Just cook some onion and maybe garlic in oil, add in some chili powder, cumin, salt and pepper, and then the beans. Mash up your beans with some broth, heat through and you are finished. These are vegan, healthy and taste great. By the way, did you know they sell broth in small boxes like juice boxes? It is so convenient when you just need a little like this, and you don't want to open a big container. Or you can use something like a soup base that you add water to. Or use water, but broth adds a little more flavor. I made these over Christmas and we had them with vegetables fajitas. You can put them into a taco/fajita or eat them as a side dish. You can barely see them under the fajitas below, but there were a necessary part for me! (Fajita veggie recipe coming soon!)

In addition, all my good dishes, placemats, utensils, etc are in boxes at my mom's, so I don't have any good props for you. What you see is really just what I eat. So I promise, once I get moved and settled my photos will get better. In the meantime, thanks for hanging in there with me, and use your imagination! The food is delicious, even if the photos aren't great!
Refried Black Beans
Prep Time: 5 minutes
Cook Time: 15 minutes
Ingredients (4 -6 servings)
- 4 cups of black beans, rinsed and drained (1 big can and one regular can)
- 2 garlic cloves, minced
- 1/2 cup finely minced white onion
- 1 Tbsp olive oil
- 1 tsp salt
- 1 tsp chili powder
- 1 tsp cumin
- 1/4 tsp smoked paprika
- 1 1/2 Tbsp lemon juice
- 1/3 cup vegetable broth
Heat a medium skillet over mediium high heat. Add onion and saute until tender and translucent. Add the garlic and spices and cook until fragrant, a couple of minutes. Add the beans and reduce heat to medium low. Mash with a potato masher, using broth little by little to make it easier. You can use more broth as needed. Mash until you get a thick chunky paste. Stir in lemon juice, and heat through. Taste and adjust seasonings as necessary.
