Hello! Sorry for the lack of posting. This has been a busy week for school but there are no recipes to share from me or from school. The raw food is so much work and equipment that it is not good to share here. (Barbara - we did make some awesome kale chips that I could share with you since you have a dehydrator!) I also have not been cooking anything blog worthy at home. I have been eating salad at night which is delicious but not a recipe. I toss romaine lettuce, with avocado, roasted sweet potato, red onion slivers, and some feta cheese. Use a basic vinaigrette and you have a great meal. But no recipe for a blog! :)
I had my practical exam for Raw yesterday and then the written exam today. I think both went pretty well Here is a little slide show of some of the food we made over the last week. Raw chocolates, enchiladas with guacamole, samosas, and more of those nori rolls made for my test that I showed you last week. Today we had an "iron chef" class in which we made up our own dishes and drinks using leftovers. I got assigned dessert so I made a raw chocolate candy - granola chocolate chip cookie dough bon bons with almond mocha milk. Both were delicious. I learned to temper chocolate this week which is a skill I am happy to know. Tempering chocolate is a process where you heat, then cool, then re-heat chocolate to very specific temperatures making it crsip and shiny as well as hard and not melty at room temperature. I coated my bon bons with tempered chocolate which I was proud of. Here are some pictures from this week.
Next week we start Macrobiotics. Hopefully I will cook at thome this weekend and have some more recipes for you. I have my last assisting class on Saturday…Gluten Free Baking public class. I can't believe only 4 more weeks of school. I will spend the 5 weeks after graduation on March 21 to work with a personal chef and then to help cook at a yoga retreat, completing all my externship requirements. Who knows after that?! I'll let you know when I figure it out…..
