Hey! I hope you all have had a good week. I have but I'm glad it is almost Friday!....We had book club Monday night. We read "The Circle" which was really good and made for a great discussion. I read it in 2013 when it first came out and re-read it for book club. It was made into a movie that recently came out starring Tom Hanks. I am told the book is much better than the movie. It is a dystopian novel about privacy issues with the internet and social media. I loved it, both times.
We meet at Bonefish Grill. They have a nice private room that is perfect for a nice dinner and good conversation. There are usually 15-22 women and it is fun. I had a new salad that was delicious. I don't have a picture but this is how the menu describes it.

Romaine and kale, ancient grains, Feta, avocado, pickled onions and sweet potato bites, tossed in our house vinaigrette, finished with a citrus aioli
I recently began eating some fish and as much as I hate the thought of eating a fish, I feel better. I hate to divorce myself from my food, but I just eat it and don't think too much about it or it creeps me out. Oh well. My salad didn't have any citrus aioli on it, but it was really good. I would recommend it.
Let's see. Last weekend we had a storm on Saturday night. It was actually late afternoon and I sat on the porch reading for most of it. It really wasn't bad except about 15 minutes where it rained hard enough that I had to go in. The next day I went for a walk and saw this, one block up the street. Yikes! Either a storm worse than I thought or a sick tree. It fell right in the front yard blocking the door to the house!

If you're still reading, finally here is a recipe. This is a really simple chocolate custard. It is not vegan (it has eggs) but it is dairy free and refined sugar free. It is quite rich but for me, it is perfectly chocolatey, and not too coconutty. It is easy to make. Really just mixing everything together and baking in ramekins in a water bath. I took these home to my Mom's a couple of months ago and my mom and my Aunt Linda both thought it was good. I hope you'll try it!
Dark Chocolate Coconut Pudding
Prep Time: 5 minutes
Cook Time: 30 minutes

Ingredients (6 servings)
- 1 can of coconut milk
- 4 ounces dark bittersweet chocolate, chopped
- 1/2 cup coconut sugar
- 2 tsp vanilla extract
- pinch of salt
- 2 large eggs, beaten
Preheat oven to 350. Fill a large baking pan half way with water.
Heat the coconut milk, chocolate, and coconut sugar in a small saucepan over medium heat.
Whisk often and cook until the chocolate has melted. Add the vanilla and salt, and whisk well.
Remove from heat and let cool 10 to 15 minutes.
Add the eggs and beat well until they are fully incorporated.
Pour the mixture into 6-1/2 cup ramekins.
Place the ramekins in the pan filled with water.
Carefully transfer the pan to to oven. Bake for 30 minutes or until the pudding is just set.
Let cool completely. Top with whipped cream, whipped coconut cream or cashew cream as desired. It is delicious just as it with no topping.
